I don't think there's a way to embed a customer satisfaction survey at the end of an email like via a footer. But your subject of the post, "How to use HubSpot CTAs to trigger simple survey responses in email" I think I can help with. It's a multistep process, and others might have a better soltuion:
1 - Create a workflow that when a user clicks your CTA a ticket is made with a unique property, in this case "Test CTA".
2- Create a survey that looks for the "Test CTA"
