What to do with old proposal templates

I have my new quote theme templates working and am wondering about the best way to transition out of the old proposal theme templates:

1. Is it safe to delete my old proposal theme templates so the no longer show up in the "Quote Template" selection dropdown in the quote wizard (and confuse users).  If I simply delete them will existing published quotes that were created using the old proposal theme templates still be viewable?  Or is there a way just to "hide" them in the "Quote Template" selection dropdown?

2. Is there a way to hide the HS "Standard" (never used by our) forms in this dropdown?

@StoneCurators sorry I missed this! If you're stilling wondering, (1) it is safe to delete your proposal templates, or I can remove them from the quote dropdown for you if you want to keep the files. (2) You should see a way to hide Standard templates in the Quote Templates library now.
