How to track subscription when payment is done offline

Hey @malanciault looks like offline payments is not currently available in HubSpot payments.
The product is very new, and is really initially designed to be a payment page creation/payment acceptance system and not a payment tracking/accounting system. So I would imagine this will come in the future but it's a bit outside the scope of the current system.
I can see however that there's a feature request open for this, I'd definitely advise giving this an upvote!

@malanciault it's also not possible to add subscriptions via the subscriptions API (it's read only), which is a little surprising, but as Tom mentioned it's such a new feature I think they've only started to scratch the surface on what will be possible.

You can manually create subscription records in HubSpot for clients who pay offline. Navigate to the "Subscriptions" section in your HubSpot account and use the "Create subscription" option to input subscription details manually.
