only Date and Month of Birth

Is there a way to only fill "Date and Month"? (as most people on the internet don't divulge YOB), e.g. on LinkedIn and FB, one knowing the day can send the greetings. Greeting B'day is a great chance to build personal rapport and open the discussion.

Are you getting this info on HubSpot form? Date of Birth property in HubSpot is a single line property and not the date picker. You can use the same in your form. Depends on the visitor how they want to provide the information. Check SS below:

But if you are using a custom property and using date picker property, then you cannot change the format and use only date and month.
