We are new users of Hubspot CRM and we have the "Sales Starter" subscription. We use Sequences to send outreach emails and it works really well. There are some customers who do not want to be contacted again. Is there a good way we can register which contacts do not want to be contacted again? Should contacts be deleted?
You probably want to just opt these contacts out of all email. This can be done at the top left of the contact record. You might want to back this up with a custom 'do not contact' property.

Deleting isn't a bad idea either depending on if you are worried about your database size, but making sure as mentioned above you opt them out first is key. In case this contact somehow gets added back in (such as via a list purchase) you don't want to start emailing someone again who specifically opted out. With all the rules and laws around spam email, these days opt-ing someone out is critical.

Hello, I would not recommend you to delete the contacts from your database. However you can simply tag them as Customers. Thereby, you would filter the contacts who enroll in your sequence.
The best way to do it is using the lifecycle stage. All your customer are gonna be Lifecycle stage = customer. And after you can create a list saying "Lifecycle stage is none of Customers" and you enroll only these contacts in your sequence.
Your can also do this by the Contacts view, adding a filter "Lifecycle stage is none of Customers".
