Could you be more specific, which part of the Sales Hub are you referring to?
If you're referring to a contact record, yes, you can create additional fields that show up in the left contact (or company or deal) record sidebar. If you want another email field, you would choose the property type 'single-line text': https://knowledge.hubspot.com/crm-setup/manage-your-properties

Which HubSpot tool are you referring to? HubSpot doesn't have it's own invoicing tool, as far as I know. Could you share a screenshot, if you're unsure?
