Why is it not possible to map custom Property HubSpot User to SFDC Fields?

I recently discovered the HubSpot User custom property and thought it was a good way to assign multiple teams to an account and contact. After playing with it more, I'm realizing I can't map it SFDC sync or be manipulated without manual intervention or massive workflows to determine the assignment. What gives? 

Does anyone have experience working with assigning tasks to specific HubSpot User Teams?

Default field mappings are set up for various HubSpot contact properties and Salesforce lead/contact fields, and users can also create custom field mappings to sync additional properties between the two platforms. I want to share this knowledge base here with more information.
