Deleting a contact in HubSpot won't delete the corresponding record in Salesforce, see the note in the sync settings below (Settings > Integrations > Connected Apps > Sync Settings > HubSpot-> Salesforce).
There might be a better way to do this but you could bulk edit HubSpot records to include a deletion flag and map this to your Salesforce records as well so that you can easily identify them after deleting the HubSpot records.

As we see more and more users of Hubspot adopt integrations (and I'm certain this will prolifirate once again on the advent of AI) this issues is proving a massive problem with this native HS<>Slaesforce integration.
At the time of writing and for anyone who has the issues IE has just deleted a record in HubSpot and, knowing this restriction, thinks: "OK, so it doesnt delete in Salesforce",.. but then arises the big question: "Now what?": -> it seems the only solution remaining is to:
Be aware of this limitations in the CRM integration.Not all CRM integrations are created equal. Make sure that you understand this limitations and don't blame your implementation parter -it's not their fault...its a fault or consequence of the integration... be aware and have a plan and leading to point number 2 - have a plan to manage deleted contacts accordingly.
Have a process in place for managing deleted contacts.This will help to ensure that deleted contacts are handled in a consistent and efficient manner in both platforms.
As obvious as this seems (sorry) bundle the above, as a mitigation strategy, within your technical teams documentation and process surrounding the completed integration and provide training to your internal team upon it
