I have recently signed up for a Hubspot, and I changed my email connection from Gmail to Office 365. It shows that my Office 365 email is connected, and now the ability to email is greyed out when I try to send an email one on one to a contact.

Could you double-check if you have connected your email address as a shared inbox?
This thread explains the difference between personal inboxes and shared inboxes.
If that is not the case, it would be great if you could share more about your current setup and what your end goal is?
