Yes, in the CRM, saved filters are a good way to group your contacts.
As for doing it by Country, you have a couple of options. Both the Contact and Company objects have standalone Country feilds - which you can turn into a dropdown list.
Contacts also have an IP country field which is populated automatically for leads generated online and can be a good alternative to asking it in a form.
