What data is removed when I am removing contact (from our company or customer contact)?.

I'd like to see a situation when only contact has been removed but deals, memos etc stays after removing contact. Is this possible?

A GDPR delete, as explained here https://knowledge.hubspot.com/privacy-and-consent/how-do-i-perform-a-gdpr-delete-in-hubspot, will remove the contact record but not affect any associated records like companies, deals, tickets, or custom objects.

Whatever information is stored exclusively on the contact record (e.g. potentially notes) will be gone after deletion.
