Need a way to tag contacts

Hi,

I need a way to be able to keep track of all the 'Projects' my contact base has inquired on. We use hubspot forms on our website, where contacts can search for differnet condo projects and inquiry on them via the forms. 

We're able to carry the project name with that response to Hubspot, but having issues figuring out how we can keep track of ALL the projects they've inquired on.

Some suggestions we've had is to use a multi checkbox field, which is great - but - in the event that specific project name is not an option on that field - then the project is not recorded.

We'd need to manually add that as an option everytime we add a new project to our website - this isnt practical for us and need a way for a multi value field that in the event a response comes through with a value that isnt an option, this will be dynamically created and selected

Any tips? 😞
