Managing follow ups better by reporting on Last Activity / Contacted date

I'm trying to experiment with better ways to manage following up on Deals. I am currently trying to build a report/dashboard that allow me to report on Deals that are open but have not been contacted or had activity in the last 5 days. I know I can get the Last Activity and Contacted dates but am not able to filter on a rolling 5 days. Any ideas or other suggestions on how to manage this?
