For deals, you can obviously set the deal fields that are required in order to move the deal forward.
Is it possible to make it so that the sales rep has to have filled out the products before they are allowed to move it e.g. to the closed won?
The only thing I can currently think of but it seems unneccessarily complex is to create a new deal field, and populate it through workflows when there are products. Is there an easier way?

Don't know of a built-in way to FORCE product creation. However, it may be a good idea to add products to deals (when appropriate) at creation time. That way, there's more time to find issues before we get to the Close Won stage.
