If you want contacts associated to companies associated to won deals, then you would do the following:
Create a company based list and filter for companies associated to deals where "Deal stage is any of [your closed won deal stage]"
Create a list of contacts associated to companies who are the list from step 1
If your contacts are associated to the deal directly, it's easier. Simply create a contact-based list and filter for contacts associated to deals where "Deal stage is any of [your closed won deal stage]".
