Inveitably vendors get into our leads workflow. Does it make sense to create a "Vendor" option to filter them out? Or do you just leave them as "--" (the unset option)?

Whether you use "Vendor" within "Lifecycle stage" or another custom property, I would definitely categorize those contacts somehow. You should know who every contact in your CRM is so that you can include/exclude them in the needed emails/lists/reports.
If there is a set of recurring vendor email domains, you could create a workflow that will automatically set them to "Vendor" if their Email domain = "[vendor email domain]" or if their "Email" contains"[vendor email domain]."
Or if you happen to have a list of the vendor emails you use somewhere, you could do a bulk import and update.
