@JRGies ,
Start by creating follow-up tasks with the due date of when you need to follow up. You can set up tasks to remind yourself to call, email, do something (to-do). You can then go to Sales > Tasks > and then sort by due date. A Screenshot below:
This way you can easily organize your priorities for the day by completing the tasks you assign to yourself. You can also create and add tasks to "Queues" for further organization.
You can also use workflows to automate task creation based on your specific needs. I made a sample workflow which creates a reminder task to call someone 3 days after they had a successful phone call. However, there are a multitude of options to make it fit your needs.

Hi @JRGies
Could you please share a screenshot of where you are getting stuck currently?
Are you looking to manually log an activity as this article here explains more?
If not, the more information, screenshots, and details you can provide, the better I can advise on the next steps.
Thank you,
Pam

Hi @JRGies
Thank you for the screenshot, currently the property Next activity date cannot be added manually.
This property is the date of the next upcoming activity for a contact.
This is set automatically by HubSpot based on user actions in the contact record. This includes logging a future call, sales email, meeting, scheduling a future meeting, or scheduling a task to be done in the future.
More information here .
Kindly,
Pam
