We need your help. The truth is, we are slowly installing new Hubspot features and try to manipulate them from top to bottom so we can implement new processes for the rest of our team.
What we're actually most worried about are the notifications. Who should I turn to for more info on this management? Of course, I have read Hubspot link below done some real experiments but the fact that we are still getting all kinds of notifications, a little less relevant. For example, if I follow a contact, I will receive all notifications associated with it (internal exchange in which it is mentioned, email exchange including or excluding it, etc).
I believe some on you can help us to filter these in depth?
You can set up the notifications for your HubSpot account from settings > Notifications. And for each record and functionality, you have options to choose from that for which setting you want to receive the notifications for. For example, check the screenshot below, here you will see, that you can choose the topics for which you want to receive notifications. Furthermore, you can create workflows to receive internal emails as notifications if certain activities occur in your account.

You are right, HubSpot notification settings can be overwhelming at first but they aren't as intimidating as they look: Set up user notifications in HubSpot
I'd recommend going through the list and reviewing them one by one. If you don't understand an item, feel free to ask a follow-up question or simply don't touch that element until you understand what it refers to.
(Super admins in Enterprise accounts can set default notification preferences for other users. If default notifications are set up, preferences set by individual users will take precedence over the defaults.)
