You could leverage the free HubSpot website option to build a digital portfolio.
As to what you should include:
reports/dashboard screenshots (with any identifying info blurred out)
case studies for projects you've worked on
marketing campaign summaries
Depending on who you did the work for, you might need their permission to include specifics, and if you don't have permission you can generalize the information to remove identifying info so you can still include it.

Other things you add could be your HubSpot Academy Certifications and any other professional certifications, you could also link to your connect.com/linkedin profiles.
I don't have an example I can share, I recently redid my own website and haven't rebuilt my portfolio.
