How do I stop HubSpot creating a contact when I send an email?

I'm using the free version of HubSpot CRM. According to this answer https://community.hubspot.com/t5/CRM/Difference-between-Log-to-CRM-and-Track-Email/td-p/32485, you can "uncheck log to CRM" but where do I find that option?

The 'uncheck log to CRM' option is only available when sending email via HubSpot-connected email clients -- e.g., Gmail, Outlook. All email sent from WITHIN the HubSpot CRM includes logging that cannot be disabled.

I am sending email via HubSpot-connected Gmail but can't see the 'uncheck log to CRM' option.

Am I looking in the wrong place?

I didn't realise that the Log tickbox would also stop the creation of a contact.
