How can I get notified of the User who has changed a particular field via Workflows?

Hi - I need to know who moved a Deal to the Lost stage which isn't always done by the Deal Owner. 

It seems that the functionality is there, but it's not accessible (I can see in the Property History who has updated the Deal, but I can't use that field)

How do I go about getting notified via Workflow (or some other method) when a HubSpot User changes a particular field?

Out of the box, this is not possible. I would assume that this can be achieved with custom code actions in Operations Hub Professional or higher – which would require the help of a developer: https://developers.hubspot.com/docs/api/workflows/custom-code-actions
