@alexagatiss when you click "Add more properties", you can specify which fields should carry over from the enrolled contact to the newly created one. You can either specify a fixed value, or, if you copy, put in a personalization token from the enrolled contact.
For example, if you have a field for the additional contact's job title on your form, in the create record workflow action, add the job title field and fill it with the personalization token of the field used on the form to capture the additional contact's job title.

Hi Karsten - thank you! I started with this, how can you map the specific field from the form to the new contact? The person submitting the form is already in our database but providing contact info of someone we don't have in HubSpot yet.
