Email not being logged after email change

A contact recently sent me a misspelled email. He sent em the correct one to update the contact information, however now when I try and email from the CRM, the address is "stuck" on the original. Even though the system shows that it was changed.

Hi Hi @JoeErato I'm a bit confused here. If you're sending from the CRM, and sending from a contact record, the email address should populate from the email property. Is the email property not saving correctly? 

 

If you could forward some screenshots, I'll be happy to look further.
