When an order is made in Shopify, this translates to a deal in Hubspot. My question is can the deal’s close date be customised based on the product being purchased?

Can these deals go to the normal sales pipeline with customised deal stages?
Some context - all products are handmade once ordered, with varying production timelines. It would be great to use the deal pipeline as our production timetable.
As we know, Shopify HubSpot integration is a native integration of HubSpot and is a general and common for all. No account/business edits can be made. Next to this, the integration uses the concept of Ecommerce Bridge so all the deals will land to Ecommerce Pipeline only.
The only way could be editing the values at later stage on HubSpot or using a custom build integration for the same.
