Two contact records can't share the same email
Contact records cant have multiple timelines
Timelines can't be segmented by sales user
The closest you can get might be to create two deals, one for each sales person, and have them log their activity to only the one deal. You might also try to use custom objects, but I think this approach gets very messy and complicated quickly.

Yes, it is not ideal, but it could be a solution from the moment there is a negotiation.
It is not clear to me one thing: how can the emails be tracked in the deal timeline? I believe that it is automatically recorded in the main timeline of the contact based on his email.
