@sjay there's no way to change the defaults, would be nice, but I don't think they will invest in changing this because most themes style CTAs automatically now.
I would just change the dropdown for Button Style to Link (no style) option and use CSS for the style altogheter, either by adding the class under advanced options or configuring it in the theme settings.

I did a little check and it seems like this tool hasn't been touched in a long time. The default color that appears, #3574E3, isn't in any of my portal's branding settings. I think it might just default to that color regardless. I would recommend either having a system where you clone an existing CTA that you like. That way, not only will the default color be whatever you like, but you can also further customize the CSS and just clone.
Alternatively, I believe you can also just 'highjack' the style with some CSS in your stylesheets. That said, I wouldnt recommend that and would just have the CTA design be re-useable. Hope this helps!
