Where do the Quotes totals come from in the Quotes Template?

Hi

I've been building out a custom quote template, and I've been customising the line_items_table module to show the info that I need. I've added a few custom fields to Line Items, specifically to show the the partner margin and partner discount. However, I need to show different totals and subtotals for the table, but I cannot figure out where the totals and sub_totals are coming from. In the screenie below, you can see that the totals are somehow linked to the ASSOCIATED_OBJECTS. 

I need totals and subtotals that are based on my custom Line Item fields. I cannot find any documentation around this. Can anyone help out here?
