As @kosalaindrasiri mentioned, there currently aren't any properties available for quote revision.
There is a quote object property called "hs_quote_version" but there is not much documentation out there and I am not entirely sure whether it actually does anything.
Since a quote is tied to a deal, you could try tracking revisions on the deal instead with some custom properties, such as:
Quote Revision Number
Last Quote Status (i.e. "Recalled")
Quote Revision Notes
This option would require cloning the quote and updating the name with the new version (i.e. "ACME Proposal - v2"). Then you would need to update the custom properties on that new Deal.
The process could be a bit tedious, though you could also look into automating it (might require Ops Hub) - assuming this would work for your use case.
