Hi @VLord4  mobile responsiveness can vary greatly depending on the theme you're using.

Is there something specific you're working on that you'd like to optimize for mobile?

No, I just want it to look mobile friendly - most specifically the text to
fit properly in the mobile view

I've created a landing page, when I go in to try to change how it appears
on mobile...it says I can't edit it in mobile editor only desktop as it is
in responsive mode.

@VLord4 I understand what you'd like to do, but if that isn't how the developer coded the template, it won't be possible.

I feel like we've ended up in a bit of a loop here and I'm not really able to help.
