I have confirmed that the "extension" has been revoked in my Stripe account. But it is still giving me this error when I try to connect my Stripe account to a new Hubspot account.

I am now finding that even when I "revoke" it on the Stripe side - when I try to reconnect it to my new Hubspot instance it is failing stating the same thing BUT ... it is adding the extension back into my Stripe account....

I'd like to clarify - the issue is that you've disconnected your Strip account from one HubSpot portal, and now you're attempting to connect it to another HubSpot portal. But when doing so, you're encountering the error "Your account is already connected to a hubspot account," is that correct?
If so, can you confirm what steps you've taken to ensure that you disconnected Stripe from the previous HubSpot portal? Was it the steps listed here?

Yes your understanding is correct.
I have logged into my Stripe account. Went to the connected apps and "revoked" access to the previous Hubspot instance that I had (and no longer have access to it doesn't exist)
So now I have gone to try to connect my Stripe account to my new Hubspot account and it is still giving me an error that my Stripe account is still connected to a previous Hubspot instance.
