I recently joined a company as their Sales Director. They have had HS for 10 years. This is my first time using/learning HS. It appears that all the sales reps can see all the deals of all the other sales reps. In CRM's I have used before, each sales rep was only able to see their own activity. As their boss, I could see everything.

Is there a setting that would change this so that each rep would only be able to see their own deals and activity and not the other reps?

Yes, this can be done in the user permissions: https://knowledge.hubspot.com/user-management/manage-user-permissions

Under the CRM section, you can set deal view access to owned only. https://knowledge.hubspot.com/user-management/hubspot-user-permissions-guide#crm-objects
