The email signature cannot be added from this dropdown, you would change that in the Inbox Settings. Click Inbox Settings on the lower left of the screen (or navigate to Settings > Inbox > Inboxes).
Under Current view, make sure that you're in the right inbox. Once you are, you should see your connected team email address. Hover your mouse over it, click Edit and you should see this:
This is where you can add a team signature. As far as I know, your individual signature cannot be used here, unless you save it as a snippet.

There is usually a bit of confusion around this. Conversations inboxes are meant for shared inboxes, managed by teams. If you're sending communication to known contacts, it's best practice to send these emails straight from the contact record or using one of the HubSpot Sales extensions.

So I followed your instructions and added the team signature but when I click on 'compose' to begin writing an email, there is still no signature there?!

Hi @LBoord , To send emails from Inbox in HubSpot, you ahve to create an Inbox and add the various channels to it: Email/form/chat etc
If you want to send one-to-one emails to your contacts, then first connect your email address to HubSpot. Then click on the contact name and send email from it's activity board: Contact > click the name of the contact > click Email tab
