That is odd. Can you check to see that the correct user is logged into the HubSpot extension? Potentially another user is logged in and when the email is tracked it is associating it with them? You would check this directly from Outlook in the extension setting.

Email integration is showing another users as sending the email
SOLVE
I am also having this problem. I integrated my hubspot email with my gmail account, but when I send emails the email shows "Raechel Canipe sent from synapsefl.com (brett.maternowski@synapsefl.com)". I have removed and restored the integration multiple times but the problem persists.
