Non-HubSpot Form from Tracking Code

I have a website that has a few Non-HubSpot forms on it.

On that website I put in a HubSpot tracking code to monitor website traffic.

Adding this code automatically linked the forms so now, when they are submitted, a contact is created / updated automatically.

That is fine but not every field is affected by this, for example some custom fields which have their counterpart in the form.

 

How can I change what fields are included when creating / updating a contact? How can I set which form fields correspond to which HubSpot fields in a contact?
