It might be worth checking out Timerman in the App Marketplace. While Timerman is an SLA Focused tool, it has the functionality to track the amount of time both tickets and deals spend in each stage down to the minute. This would allow you to easily view the time a deal has spent in each stage and even create reports as all of the times automatically update into custom deal properties created by Timerman.
