The Last Contacted property is defined as the last date and time a chat conversation, call, sales email, or meeting was logged for the contact. Is there a way to filter that down to have separate properties that would track dates for the last time a contact was called vs the last time they emailed?
There is no way to "filter" the Last Contacted property. But what we can imagine is to create several properties : "last email", "last meeting", etc. and then use some custom code in a workflow (Hub Operations pro required) or an external middleware (such as Make or Zapier) to fill these dates. I've done that for a client : each time a call is finished and the result is X or Y, then fill the property "last connected contact" with today's date.

I don't see a solution that would be automatic but want to tag some of our experts here in case they can think of a workaround - @JSC@Josh@MandyDROS do you have any thoughts for @JThomas40 on this?
