The only column I need to re-order by is Company name - preferrably a-z, but anythign that groups all the contacts from one company in a list together. It’s the only one which doesn’t work.

You’re correct, sorting by associated objects is not possible. Sorting by the contact property Company name however is.
You can add Company name by clicking Edit columns to the right of the index page. If the Company name field is empty or not consistently filled, you could create a contact-based workflow that copies the company’s Name into the contact’s Company name. You can then sort by this column.
