We’ve got several workflows turned on for both deals and contacts. Is there a way for a client to unenroll from a CTA button that’s attached to the automated marketing emails? I can see that there are ways to unenroll from A workflow, but what if there are several workflows?

There isn’t an out-of-the-box feature for your specific requirements. The way I’d approach this is with a landing page (simple, plain, “Thank you for letting us know”) and a CTA created under Marketing > Lead Capture > CTAs that points to this landing page.
You can then create a list of contacts who have clicked that CTA. This would be a list you exclude from all of your workflows. This is something you have to change in each workflow that it should apply to, there isn’t a bulk editing options. (I recently had to update 500 workflows this way and it took me roughly 20 seconds per workflow. I put on a nice podcast. It’s a dumb task, yes.)
Alternatively, the CTA could also be a text link but that means that you would have to update the list everytime you add a new email. You would have to add a filter for this new email every single time.
Keep in mind that this could also be solved with a subscription type. By clicking on Manage preferences at the end of an email, contacts could unsubscribe from a specific subscription type that delivers automated emails to them.
