Currently, you can either have all customers receive reminders to pay their invoice or no one at all. We need to turn off payment reminders for specific invoices.

I’d suggest adding your comment on the Idea itself, here: Advanced Automated Invoice Reminders .
A workaround for now is to open the invoice in Commerce > Invoices and use Actions > Edit reminders to remove any upcoming reminders for that specific invoice.
If you’d like to stop reminder emails more broadly, you can turn off the reminder automation by going to Settings > Objects > Invoices > Automation.
That said, I agree that a per-invoice control for reminders would be a great addition and very helpful in this scenario!
