Tracking has been placed on our webpages and I know people are going there yet when I go to analytics tools and prospects there is nothing there.
What am I doing wrong?

I think I had experienced the same issue, I had 200-OK http responses when I was calling track.hubspot.com but nothing was showing on the contact timeline.
I sended somthing like GET - https://track.hubspot.com/v1/event?_n=MyEventName&_a=6184746&email=20191023_075649.2568200@gmail.com
I seem’s OK now, but I did loose some events
