is there a way for creating a sub account in hubspot where the deals of this account are not visible to the rest of the sales and this account can’t see our other deals?

Yes, you can limit user permissions by following these steps. User permissions include object access to deals, see here.
If you don’t want users to see deals of others (just the ones they created themselves), you could set the permissions like shown below:
