Hi @LKarlsson,
You should be able to revert those changes by navigating to Settings > Sales > Deals. When you scroll down to the pipeline stages, hover your mouse over the UPDATE STAGE PROPERTIES column and an Edit properties button should show up. Click it and you can “unquire” the properties.
