If you export, make changes in excel and then import your spreadsheet back in, will your communication data from emails, etc still be associated with each person’s record? Thank you!

Yes. When you import contacts, HubSpot will update contacts with any information that’s new in the file. Everything outside of the new information remains unchanged. (This requires an email address or contact ID column in your import file. HubSpot will create new records whenever there are new email addresses.)
In other words, if you re-import an Excel file with an email address column and a column of job titles, for example, and the job titles are updated, then HubSpot will update the job title field. Existing one-to-one emails, tasks, notes etc will remain unchanged.
