We have a need to modify the look and behavior of the meetings form. For example, scrollbars don’t appear on the time container on iOS and we’d like to tweak that. There are some other visual tweaks we’d like to make.
I noticed that the meeting module is just an iFrame to pages on meetings.hubspot.com. Is there a way to modify these pages to customize the meeting signup flow?

This one is limited to the options in-app for editing and customizing your meetings page. I found this Ideas thread for the same request and gave it an upvote — Custom the design of meeting booking widget.
I understand many reasons why this is a desirable feature. And I do not have a document that provides an explanation of why we cannot edit it the way you want.
