We’d like to add a list of job titles in a drop down list rather than entering the titles as a single line of text but when I go into properties, the message says “this property is provided by HubSpot and can’t be edited”.
Can I create a new “Title” property with a drop down list and replace the HubSpot Job Title property in the Contact forms? Or edit the existing Job Title single line of text property to add a drop down list?

If you need this to be a dropdown, you would create a new property, correct. You can do it from the form editor directly (by creating a new field via the left sidebar) or in the settings: Create and edit properties
Once created in the settings, make sure to refresh the property editor. You can then add it and remove the single-line text property.
