How can i create a hubspot report to check how many meetings booked by representative who have been enrollled in a specific workflow?

You would do this with the custom report builder: Menu > Reports > Reports > Create report > Custom report builder
Before you do that, however, you need to create an active list of contacts who have been enrolled in the workflow you want to look at. You’ll later filter for this list.
For your report, select data sources Activities (primary) and Contacts.
You can now filter for Activity type (meeting), Activity assigned to (representative) and create a report filter by list membership (see above).
Depending on what visualization type you’re looking for, you could for example create a table visualization, displaying the name of the activity and who it is assigned to, sorted by activity date.
