@MWeis, the solution did end up being in Google Workspace settings. Here’s the help document I found on it: Control video conferencing for Google Calendar events (for admins) | Google Workspace Help.
Had to convince the team it would be easier to remove Meet as the default, but eventually was able to do it. It’s made things much easier!
