Is there a way to update contact records that are already in HS without overfilling what is already there? I tried to do this yesterday thinking the system would recognise that the import contains additional property information and simply add to the existing contact. This was not the case and resulted in a long evening of rectifying.

HubSpot will update the information of existing contacts based on their email address (which serves as the unique identifier) or a previously exported contact ID from HubSpot.
At the moment, there isn’t any functionality that lets you choose whether a contact field in HubSpot should only be updated if it’s empty. HubSpot will overwrite any existing values with the information from the import.
If you want to ensure that existing values in HubSpot are not overwritten, you have to setup your import file accordingly, unfortunately.
