Yes, you can do this by creating custom product properties. See how I have done that in the below screenshot-
To do this, go to Settings > Data Management > Properties > Product Properties > Create Property
I created two dropdown select proprties so I have a list of values to choose from, but you can also create these as single-line text properties.
Once you have created the properties, you can add them to the ‘Review line items’ screen in the quote creator by clicking Edit Columns.
