For most companies I have multiple contacts in CRM.
When a company becomes a customer I change the lifecycle stage of the company to ‘customer’. But do you update the lifecycle stage for all contacts associated with the company to ‘customer’ as well or do you just do that for the contact(s) that are directly involved in signing the deal and leave the rest of the contacts in MQL or lead lifecycle stage e.g?

That depends on your sales process, your products and services, how you would like to report on contacts and companies as well as your goals.
It would for example make sense to mark all contacts as customers if you want to use that lifecycle stage to exclude contacts from certain marketing activity. Similarly, if you want to address all contacts at the company as part of certain customer marketing or sharing onboarding and training resources, having all contacts marked as customers might make that easier.
On the other hand, if you want to be able to keep track of who exactly you sold to in a company and you might be selling to other employees or teams as well, you might want to only update those contacts you actually sold to with the lifecycle stage customer. Additionally, if you want to use the lifecycle stage for automating marketing communication, some contacts might be irritated if they’re addressed as customers but work on an entirely different team than the one you sold to.
In other words, it depends. Think about what you would want to do with the information on the contact record, then decide.
